What files do I have to transfer to "keep" my aircraft on a new system?

You can just copy across the entire contents of the "work" directory.

I've reinstalled the plane at least 3 times now, and I have not needed to copy anything. The persistence files are in a different location to the plane. On one occasions I just deleted the installation folder, and after reinstall I still had both my engine, and airframe hours.
If you were installing on a new machine, then the folder copy would be necessary.

Yeah, if reinstalling the Comanche to an existing MSFS installation, there should be no need to copy files. It's only needed if switching across to a new system as in the OP's case, or if making a clean reinstall of MSFS on the same PC.

I've never had to do this, but does uninstalling MSFS actually wipe out the user profile part of MSFS? I switched motherboards, CPU etc a few years back, and didn't have to reinstall my OS, Windows 10 at the time, and everything carried over. This is pre-Comanche days, of course.

Yes, or at least in my experience of doing so (MSFS Store install), uninstalling and then reinstalling the sim will nuke the entire "Microsoft.FlightSimulator_8wekyb3d8bbwe" folder. I wouldn't be surprised if the Steam version handles a reinstall process a little better though.
